Vincent and Tania Careme inherited 5 hectares of vines in the best terroir of Vouvray (just east of the city of Tours) from Vincent's parents. Since then, they have purchased other vineyards and leased some of them for a total of about 15 hectares, including the superb Clos terroir.
Their cellar is very old. It is dug into the tufa cliffs just outside the village of Vernou. Inside the cave are extraordinary sculptures made by a friend, Olivier Masson.
Vincent is passionate about the wines he produces and the vineyards he cultivates. All of his wines are made from Chenin Blanc (Orbois white grapes are also allowed in this appellation) and they produce both sparkling and still wines. The wine is aged in oak barrels, the majority of which are old (up to 10 years) and a small proportion (about 10%) are new.
The grapes are hand-picked and gently pressed, then the natural yeasts are allowed to do their work.
The vines grow close to the cave (some of them) that overlooks the cliffs that border the Loire in this part of the valley. Limestone rocks litter the surface and solid limestone is never far below the surface.
