Age of the vines
The vines are 50 years old.
Geology
The vines are located in the communal appellation area of Aloxe-Corton, a charming village renowned for having the only red Grand Cru in the Côte de Beaune. The soil consists of a clay-marl subsoil with limestone debris. The vines are pruned using the Guyot method (Poussard) and various green harvesting operations are carried out (disbudding, trellising, pollarding).
Vinification
The grapes are harvested by hand, with sorting on the vines followed by table sorting (and, in some years, the use of an optical sorting machine). The grapes are then taken to the winery.
Ageing
After light crushing and destemming, the whole grapes are placed in stainless steel vats. A small proportion of whole grapes may be added depending on the state of the raw material. After a few days' cold maceration, active fermentation takes place under temperature control. During this phase, the cap is pumped over and/or the cap is punched down. Once fermentation is complete, the free-run juice is separated from the solids, and the pomace is pressed at low pressure in a pneumatic press. The wines are then placed in barrels (approximately 30% new wood) for 14 months, during which malolactic fermentation takes place. A month before bottling, the wines from the different barrels are blended in vats. No fining is carried out, and a light lenticular filtration precedes bottling. A few technical adjustments may be made depending on the vintage. Bottling follows the lunar calendar.
Tasting
The attack reveals aromas of blackberry and bilberry, followed by spicy tannins that add a velvety structure. The finish is generous with spicy notes.
Food and wine pairing
This wine goes perfectly with powerful dishes such as grilled meats, various cheeses and game. Serve at 14°C.
