Bourgogne Chardonnay 2022 Cuvée St Vincent - Vincent Girardin

GEOLOGY
The grapes come from parcels located in the Côte de Beaune regional appellation area. Soil: Clay and limestone. Guyot with different annual work on the vine (pruning, trellising, leaf removal).
VINIFICATION
Manual harvesting, sorting on the vines and then in the vat house and finally pressing (pneumatic press) to obtain a slow extraction.
MATURING
The grapes are left to settle after a light settling. The grape must is placed in 500 litre French oak barrels (no new barrels) in which the alcoholic and malolactic fermentations take place with indigenous yeasts and bacteria. The wine will be aged on fine lees for 10 months. No battonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending followed by a light fining and filtration before bottling. Bottling is done according to the lunar calendar.
TASTING
Aromatic wine with fruity, floral notes and a lot of sweetness in the mouth. Lots of freshness and minerality.
MEALS
As an aperitif, with a platter of cold meats and cheeses, with shellfish and raw vegetables. Serve at 12°c.
