Bourgogne Red 2020 Cuvée St Vincent - Vincent Girardin
**AGE OF THE VINESThe vines are 35 years old.
**GEOLOGY**The grapes come from vineyards located in the Côte de Beaune regional appellation area.The soil is clay-limestone.The vines are pruned using the Guyot method and various green harvesting techniques such as disbudding, trellising and pollarding.
**WINEMAKING**The grapes are harvested by hand, with sorting on the vines followed by table sorting (and, in some vintages, the use of an optical sorting machine) in the winery.
**REFINING**
After light crushing and destemming, the grapes are placed in stainless steel vats. A small proportion of whole grapes may be added depending on the state of the raw material.After a few days' cold maceration, active fermentation takes place, with temperature control.During this phase, pumping over and/or punching down are carried out.After pneumatic pressing, the wines are placed in barrels (around 30% new wood) for ageing, which lasts 15 months, including malolactic fermentation.One month before bottling, the wine from the different barrels is blended in vats.No fining is carried out and a light lenticular filtration precedes bottling, which takes place according to the lunar calendar.Technical adjustments may be made depending on the vintage.
**TASTING NOTES
A rich wine with notes of red fruit.Elegant nose with aromas of blackcurrant, raspberry and strawberry.
On the palate, supple attack and silky tannins, with good power.
**FOOD PAIRINGS**
Pairs well with red meat, various cheeses, poultry, on its own or with a charcuterie board or barbecue.
