ÉLEVAGE
Racking after a light settling of the must. The grape must is placed in 228-litre French oak barrels (15% new barrels) for alcoholic and malolactic fermentation using indigenous yeasts and bacteria. The wine is aged on its fine lees for 18 months, without stirring. A month before bottling, the wines from the different barrels are blended in a stainless steel vat. The wine is then lightly fined and filtered before bottling, which takes place according to the lunar calendar.
TASTING
The wine's minerality and length gradually reveal complex aromas of fruit and spice, underpinned by great breadth and purity. The wines are well-balanced, with fresh, crisp characters that balance the fruit flavours.
MEALS
Ideal with grilled fish, salmon, trout, seafood and spicy cuisine. Avoid with sauces that are too creamy or cuisine that is too rich. Serve at a temperature of 12°C.
