Tasted by William Kelley in 2023: ‘The 2020 Chassagne-Montrachet 1er Cru Les Caillerets is gorgeous, blending aromas of pear and orange zest with notions of freshly baked bread, white flowers and nutmeg. Quite full-bodied, satiny and layered, it is concentrated and serious, with racy acids, chalky structure and a long, penetrating finish. It deserves some bottle age."

GEOLOGY
The vines are located in Chassagne-Montrachet, on the southern outskirts of the village, above the ‘Les Champs Gains’ plot. Their easterly exposure favours good acidity in the grapes. The soils, located at the base of the hillside, are clay-limestone, with a predominance of very stony Bathonian limestone. Large marble quarries form a rock face, ideal for Chardonnay. The vines are pruned using the Guyot method (Poussard), with various green harvesting operations such as disbudding, trellising and pollarding.
VINIFICATION
The grapes are harvested by hand, carefully sorted in the vineyard and then in the winery, followed by slow pressing in a pneumatic press.
AGEING
After a light settling, the must is put into 228-litre French oak barrels (15% of which are new). The alcoholic and malolactic fermentations take place in barrels using indigenous yeasts and bacteria. The wine is matured on its fine lees for 18 months, without stirring. A month before bottling, the wine from the different barrels is blended in a stainless steel vat, followed by racking before fining and light filtration. Bottling follows the lunar calendar.
TASTING
This wine has pronounced mineral aromas (silica) and notes of lemon. Lively, it has remarkable length and a complexity reminiscent of the great white wines of Burgundy, with a unique personality.
FOOD AND WINE PAIRINGS
Ideal with grilled fish, salmon, trout and seafood. Avoid sauces that are too creamy or dishes that are too rich. Serve at 12°C
