GEOLOGY
The vineyards are located in the south of the Côte de Beaune, a few kilometres from the town. One of the villages which, along with Meursault and Puligny-Montrachet, make up the prestigious "Côte des Blancs". A blend of plots from the "tête de clos", "petits clos" and "fairande" districts. Soil: chalky on top and deeper clay on the lower part of the plots, which is ideal for Chardonnay.The vines are pruned using the Guyot method and various green harvesting techniques (disbudding, trellising, pollarding).
VINIFICATION
The grapes are harvested by hand, sorted on the vines and then in the winery, before being pneumatically pressed to ensure slow extraction.
REFINEMENT
Racking after a light settling.The must is placed in 228-litre French oak barrels (15% new barrels) for alcoholic and malolactic fermentation using indigenous yeasts and bacteria. The wine is matured on its fine lees for 18 months. No stirring of the lees. One month before bottling, the wine from the different barrels is placed in a stainless steel vat for blending. The wine is racked before fining and lightly filtered before bottling.Bottling follows the lunar calendar.
TASTING
Powerful nose, good length with a mineral finish.Pale gold colour with green highlights.Toasty nose with citrus notes.Dense, mineral and complex on the palate, with a lingering finish.
