GEOLOGY
The vines are located in the commune of Aloxe Corton, Pernand Vergelesses and Ladoix Serrigny. South, South-West, South-East and North-West exposure giving the grapes a good acidity content. Soil: Comes from Jurassic soils (145 million years old), with marly soils (yellowish, ochre and brown), rich in clay. Limestone banks alternate with marl under a thin layer of rendzine. The slopes are steep (20 to 23%) and the vineyard is located between 280 meters and 330 meters of altitude. The pruning is done in Guyot with various green works (disbudding, trellising, pollarding).
VINIFICATION
Manual harvesting, sorting on the vines and finally pressing (pneumatic press) to obtain a slow extraction.
BREEDING
Racking after a light settling. The grape must is placed in 228 liter French oak barrels (15% to 20% new barrels) in which the alcoholic and malolactic fermentations will take place with indigenous yeasts. The wine will be aged on fine lees for 18 months. No battonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Racking before fining and light filtration before bottling. The bottling is done according to the lunar calendar.
TASTING
A very complex wine which expresses itself in time with very mineral notes (flint, vegetal notes). These aromas will evolve later on flint, lemon peel.
METS
Bresse chicken with cream, sweetbreads with morels, truffled foie gras, Comté or old Cantal cheese. Large fish and shellfish (St Pierre, Crayfish, Char, Langoustine) Serve at 12°c.
