When to drink this wine: 2025 - 2050
Tasted by William Kelley in 2022: ‘A brilliant wine, the 2019 Corton-Charlemagne Grand Cru Quintessence displays aromas of pear, citrus oil and peach in the glass, mingled with notes of hazelnut, freshly baked bread and dried white flowers, framed by a deft touch of youthful reduction. Full-bodied, muscular and multi-dimensional, it is deep and layered, with huge reserves of concentration and structuring extract, girded by vibrant acids. Long and penetrating, it comes from a single parcel of Aloxe-Corton below the cross (recently demolished).
AGE OF THE VINES
The vines are 60 years old.
GEOLOGY
The vines come from the commune of Aloxe-Corton, benefiting from a south and south-west exposure, which gives the grapes good acidity. The soil is made up of hard limestone and marl, with a south-east exposure. The vines are pruned using the Guyot method, with various green harvesting operations such as disbudding, trellising and pollarding.
VINIFICATION
The grapes are harvested by hand, with meticulous sorting on the vines, followed by pneumatic pressing for slow extraction.
AGEING
After a light settling of the must, the grapes are placed in 228-litre French oak barrels (15% to 20% of which are new), where they undergo alcoholic and malolactic fermentation using indigenous yeasts and bacteria. The wine is aged for 18 months on its fine lees, without stirring. One month before bottling, the wine from the different barrels is blended in a stainless steel vat. The wine is racked before fining and lightly filtered before bottling, which takes place according to the lunar calendar.
TASTING
This wine is very mineral and powerful. The altitude of the plot and its hard limestone composition give it exceptional minerality and freshness, justifying its name ‘Quintessence’.
FOOD AND WINE PAIRING
Ideal with Bresse chicken in cream sauce, veal sweetbreads with morel mushrooms, truffled foie gras, Comté or old Cantal cheeses, as well as great fish and shellfish (Saint-Pierre, crayfish, char, langoustine). Serve at 12°C.
