GEOLOGY
The vines are located in the commune of Meursault.The climate is cool, sloping and stony (a lot of limestone and chalk) and the Murisaltian nature is very seductive.Eastern exposure gives the grapes good acidity.Soil: At the base of the hillside, clay-limestone soils mixed with "chaillots" (siliceous residues of flinty limestone).This loose soil is rich in potash and phosphoric acid. At mid-slope, the stony limestone soil is ideal for Chardonnay. The vines are pruned using the Guyot method (Poussard) and various green harvesting techniques (disbudding, trellising, pollarding).
VINIFICATION
Harvested by hand, sorted on the vines and then in the winery, before pressing (pneumatic press) to ensure slow extraction.
REFINEMENT
Racking after a light settling.The must is placed in 228-litre French oak barrels (15% new barrels) for alcoholic and malolactic fermentation using indigenous yeasts and bacteria.The wine is matured on its fine lees for 18 months.No stirring of the lees.One month before bottling, the wine from the different barrels is placed in a stainless steel vat for blending. The wine is racked before fining and lightly filtered before bottling. Bottling follows the lunar calendar.
