Meursault Les Vieilles Vignes 2020 - Vincent Girardin
Directly from the wine estate
VINIFICATION
The grapes are harvested by hand, sorted on the vines and then taken to the winery, before being pressed using a pneumatic press to ensure slow extraction.
AGEING
After a light settling of the must, the grapes are placed in 500-litre French oak barrels, 10% of which are new. Alcoholic and malolactic fermentation take place naturally using indigenous yeasts and bacteria. The wine is aged for 15 months on its fine lees, without stirring. A month before bottling, the wines from the different barrels are brought together in a stainless steel vat for blending. A racking is carried out before fining, followed by a light filtration before bottling. Bottling follows the lunar calendar.
TASTING
This wine offers a delicious marriage of toasted almond and hazelnut, enhanced by vegetal and floral notes such as hawthorn, elderberry, fern, lime blossom and verbena, as well as mineral nuances of flint. Aromas of butter, honey and citrus fruit also come through on the nose. On the palate, the wine is richly flavoured with chewy hazelnut, with a fine balance between smoothness and freshness. It stands out for its length and structure.
FOOD PAIRINGS
This wine goes perfectly with blue cheeses, foie gras, veal or poultry in white sauce, as well as grilled shellfish and shellfish in sauce. It should be served at a temperature of 12°C.
