GEOLOGY
Burgundy's most famous white Grand Cru. The vines are located in the commune of Puligny-Montrachet, facing east to benefit from optimum sunshine.The soil comes from the Jurassic period (175 million years ago) and is made up of shallow layers of marl, marly limestone and stones. The vines are pruned using the Guyot (Poussard) method, with various green operations such as disbudding, trellising and pollarding.
VINIFICATION
The grapes are harvested by hand, carefully sorted on the vines and then slowly pressed in a pneumatic press.
AGEING
After a light settling, the must is placed in 228-litre French oak barrels (25% new) for alcoholic and malolactic fermentation using indigenous yeasts and bacteria. The wine is aged for 18 months on fine lees, without stirring. A month before bottling, the wine from the different barrels is blended in a stainless steel vat, followed by light fining and filtration. Bottling follows the lunar calendar.
FOOD AND WINE PAIRINGS
It goes perfectly with Bresse chicken in cream sauce, sweetbreads with morel mushrooms, foie gras with truffles, Comté cheese or old Cantal cheese. It also goes well with large fish and shellfish (monkfish, crayfish, char, langoustine, lobster) as well as pan-fried veal. Serve at 13°C.
