GEOLOGY
The grapes come from the plot "Les Grands Epenots", in the village of Pommard, in the south of the Côte de Beaune. Soil: limestone and some clay. Steep slope. Pruning is done in Guyot with various green works (disbudding, trellising, pollarding).
VINIFICATION
Hand-picked, sorted on the vines and then sorted on a sorting table (in some years, an optical sorting machine is used) at the winery.
BREEDING
The grapes are lightly crushed and de-stemmed and placed in stainless steel tanks. A small amount of whole grapes may be added depending on the condition of the raw material. After a cold maceration of a few days, the active phase of fermentation takes place with temperature control. During this phase, pumping over and/or punching of the cap is carried out. After pneumatic pressing, the wines are put into barrels (about 30% new wood) where the ageing takes place. This lasted 15 months, during which time malolactic fermentation took place. One month before bottling, the wine from the different barrels is blended in vats. No fining and a light lenticular filtration preceded bottling. Some modifications on the overall technique may be made depending on the vintage. Bottling is done according to the lunar calendar.
TASTING
The Pommard 1er Cru "Les Grands Epenots" has a dark red colour with intense aromas of blackcurrant. The palate is dominated by astringency thanks to a well marked acidity and a mellowness that appears only after a minimum of maturation.
METS
It goes well with finely prepared red meats, game birds and dishes in red wine sauce, even slightly spicy. It is also suitable for strong classic cheeses. Serve at 14°c.
