91/100 Wine Spectator
Intense strawberry, cherry and floral flavours combine with taut structure in this compact red. Balanced, with a long if slightly austere finish today.Needs time to relax.Best from 2021 to 2035.
AGE OF VINE
45 years old
GEOLOGY
The vines are located in the village of Pommard, north of the village on the side of Volnay (Vaumuriens). Soil: very clayey soil with some limestone on the surface. Pruning is done in Guyot (Poussard) with various green works (disbudding, trellising, pollarding).
VINIFICATION
Hand-picked, sorted on the vines and then sorted on a sorting table (in some years, an optical sorting machine is used) at the winery.
BREEDING
The grapes are lightly crushed and de-stemmed and placed in stainless steel tanks. A small amount of whole grapes may be added depending on the condition of the raw material. After a cold maceration of a few days, the active phase of fermentation takes place with temperature control. During this phase, pumping over and/or punching of the cap is carried out. After pneumatic pressing, the wines are put into barrels (about 30% new wood) where the ageing takes place. This lasted 15 months, during which time malolactic fermentation took place. One month before bottling, the wine from the different barrels is blended in vats. No fining and a light lenticular filtration preceded bottling. Some modifications on the overall technique may be made depending on the vintage.
TASTING
A beautiful dark ruby colour. The nose gives off aromas of black fruits and spices accompanied by woody and smoky notes. The palate is powerful with present and well-coated tannins accompanied by pleasant woody notes. This wine has a good structure and good aromatic persistence.
METS
Accompanies marinated meats, game, braised ham, hare terrine and various cheeses. Serve at 14°c.
