AGE OF VINE

GEOLOGY
the vines are located in the commune of Puligny-Montrachet, on the top of the hillside at the southern end of the appellation. Soil: rich, stony and shallow clay-limestone soil, facing south-east. Pruning is done in Guyot with various green works (disbudding, trellising, topping).
VINIFICATION
Manual harvesting, sorting on the vines and then in the winery and finally pressing (pneumatic press) to obtain a slow extraction.
BREEDING
Racking after a light settling. The grape must is placed in 228 liter French oak barrels (15% new barrels) in which the alcoholic and malolactic fermentations will take place with indigenous yeasts and bacteria. The wine will be aged on fine lees for 18 months. No stirring of the lees. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Racking before fining and light filtration before bottling. The bottling is done according to the lunar calendar.
TASTING
Very elegant wine with mineral notes and well integrated acidity. Long and fine in the mouth. A very nice precision is offered to us, on woody and fruity notes to give way to a final on a lemony note.
METS
Will accompany with confidence a fresh salmon steak, pan-fried scallops or a magnificent blue lobster from Brittany... Serve at 12°c.
