- AGE OF VINE : 45 years old
- GEOLOGY : The vines are located on the southern edge of the village of Volnay, near Pommard, next to the famous Clos des Ducs.
- Soil: Hard limestone at the bottom and marly limestone above. The soil is fairly cold and composed of clay and heavy limestone.
- The vines are pruned using the Guyot method and various green harvesting techniques (disbudding, trellising, pollarding).
- VINIFICATION : The grapes are harvested by hand, sorted on the vines and then sorted on a sorting table (in some years, an optical sorting machine is used) at the winery.
- REFINEMENT : After light crushing and destemming, the grapes are placed in stainless steel vats. A small proportion of whole grapes may be added depending on the state of the raw material. After a few days' cold maceration, the active phase of fermentation takes place with temperature control.During this phase, the must is pumped over and/or the cap is punched down.After pneumatic pressing, the wines are placed in barrels (around 30% new wood) for ageing. This lasted 15 months, during which malolactic fermentation took place. A month before bottling, the wine from the different barrels is blended in vats. No fining and a light lenticular filtration precede bottling. Some modifications to the overall technique may be made depending on the vintage. Bottling follows the lunar calendar.
