William Fèvre is one of the largest wine estates in Chablis. It was developed by the eponymous William Fèvre between 1957 and his retirement in 1998, when it was sold to the Joseph Henriot Champagne House. William Fèvre started with only 7 hectares and quickly grew to 48 hectares, planting largely in the best of the grands crus where the vineyards had fallen by the wayside. However, Fèvre's penchant for new oak was not to everyone's taste.
Since the purchase by Henriot, the wines are made by the talented Didier Séguier, who was previously part of the Bouchard team in Beaune. The estate's wines include 12 hectares of premier cru vines and no less than 16 hectares of grands crus. The entire harvest of their wines is hand-picked (the grands crus in small crates, with a sorting table at the bottom of the cellar to ensure the quality of the raw material).
The wines of the 1er cru are vinified at 40-50% in oak barrels, the grands crus receiving 70-80%, but without using new wood - the estate receives an abundant supply of one-year-old barrels from Maison Bouchard and the average age of the wood in the cellars is 5 years. The components of the barrel and the vat are blended after four to six months for bottling before the end of the year.
