Tasted by J.S in 2019: - ‘Very attractive aromas of ripe white and yellow peaches with a slightly bright edge and lightly toasted, flinty nuances. There is such richness and balance on the palate, with a fleshy, smooth construction; right through to the long finish bursting with lemon and peach. A lively wine. Drink it or keep it.

Part of the Henriot Champagne group, this house has quickly succeeded in becoming one of the great names in the appellation. Domaine William Fèvre offers this Chablis Premier Cru Vaillons, a 100% Chardonnay white wine from vineyards with hard, compact, fissured Portlandian limestone soils. This refined vintage, both round and full-bodied on the palate, is aged for 12 to 14 months and goes perfectly with a pan-fried scampi with citrus fruit. The 2017 vintage received a remarkable score of 94 from James Suckling, among other distinctions.
- Grape variety: 100% Chardonnay
- Serving temperature: Between 9 and 12ºC
- Food pairing : Perfect with fish, seafood, shellfish, poultry and white meats.
- Soil: Limestone soil on hard, fissured Portlandian limestone.
- Harvest: By hand
- Vinification: Gravity process to avoid pumping, short pneumatic pressing and light static settling. Some of the must is vinified in 6-year-old French oak barrels (30-40%) and the rest in small stainless steel vats.
- Ageing: 12 to 14 months, including 5 to 6 months on fine lees in oak barrels for 30 to 40% of the cuvée, then refined in stainless steel vats.
